Set to open in late June, 2025, Felons Seafood is a fish-focused dining room and bar from Felons Brewing Co., combining fresh produce with specialty brews in a laid-back waterfront setting.
Taking pride of place on Manly Wharf, the kitchen will be led by up-and-comer Luke Bourke with input from former Rockpool chef Corey Costelloe, and offer a seasonal menu focusing on responsibly sourced Australian seafood paired with Felons’ signature brews, a curated wine and cocktail list, and a Sydney Harbour breeze.
The menu will be refined but accessible to all: raw bar faves, whole grilled fish, and seafood classics taking inspiration from Bourke’s Indigenous heritage (he's a Palawa man, and alumnus of the National Indigenous Culinary Institute), and Costelloe’s produce-driven approach.
Felons Seafood maintains the approachable energy that makes Felons Brewing Co. one of our favourite pubs in Sydney.
